Chocolate and Peanut Butter Hempseed Rice Crispy Treats

This recipe is for my husband’s 43rd birthday. Although he is not vegan, yet, he certainly enjoys a vegan dessert when offered and he got to lick the spatula after he helped me make this!

One of the main ingredients in this recipe is hemp hearts. First off why should you eat hemp hearts? Hemp seeds can help curb your appetite and are full of many nutrients. Omega 3 and Omega 6 which is good for healthy hair, skin, and nails. Hemp hearts are also high in magnesium which helps with muscle cramps, pms and menopause symptoms.

What you will need:

  • 1 1/2 cups of smooth peanut butter
  • 1 tablespoon of peanut butter for the topping
  • 1 1/2 cups of vegan chocolate chips
  • 1/3 maple syrup or agave
  • 1 tsp vanilla extract
  • 1/3 cup of hemp seeds
  • 3 cups of rice crispies

We used chocolate rice crispies since it was the only kind at our Kroger that was organic.

In a large bowl mix the peanut butter, maple syrup, and vanilla till smooth then add the hemp hearts and rice crispies.

Spray a 9×13 pan and take a large pot filled with some water in it and a smaller pot to make your own double boiler to melt the chocolate chips and peanut butter.

Press the rice crispies into the greased pan down to a flat layer. Once the chocolate has melted add this to the top of the rice crispy and hemp mix. Put in the freezer for 30 minutes. Easy peasy!
