Thai Zoodle Bowl

Raw and delicious!

This Thai Inspired Zoodle Bowl is the last in the detox series I was working on. Between these recipees I have made it through 30 days of eating raw food. Not to say I haven’t mistakenly eaten something that was cooked (roasted red pepper in a jar duh) but as a whole I have eaten fruits and vegetables, uncooked, for 30 days and I have lost weight and my stomach is much flatter.

This recipe is enough for 2-3 people.

For the base you will need:

5 zucchini

1 cup of shredded carrots

You will need a spiralizer.

1 red pepper or 4-5 mini peppers

A handful of chopped cilantro

1 cup of raw cashews in halfes and pieces

For the sauce you will need:

1 lime squeezed or juiced

3 tsp sesame oil

1/4 tsp of cayenne

1/4 tsp of crushed red pepper flakes

2tsp liquid amminos

1/4 tsp sea salt

1/4 tsp black pepper

2/3 cup of peanut butter

Spring Water (adding a small amount at a time)

Agave (adding a small amount at a time)

In a bowl or pot mix the sauce ingredients together with a rubber spatula slowly adding water until it becomes a creamy consistency and adding agave to to taste.

Agave had a lower glycemic index than sugar.

Now that I have finished with this detox I plan to eat 50% raw and 50% cooked diet eating a mainly whole food plant based diet but I know I will want some comfort foods so I plan on allowing myself a cheat day and I am going to The House of Mental on 801 S Chester st Little Rock for Soul Food Sunday. All vegan comfort food.
