This meal is easy and hearty. Perfect meal to bring to a potluck. My omnivore husband and my 3 year old vegan kid both devoured it!
It starts with your favorite vegan ground beef replacment. I used Litelife. Vegan cheeze sauce 2 of the 3 packs and 1lb of gluten free macaroni.
Brown the “meat” with the following:
- 1 teaspoon chili powder
- 1 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tsp cayenne
- 1 tsp smoked paprika
- 1 teaspoon liquid aminos
While that is cooking boil your pasta according to the instructions and drain.
Take 1 can of diced tomatoes and add it to the browned meat with 1/4 cup of nutritional yeast.
Once the burger mixture is mixed together move it aside and cover while you prepare the cheeze sauce and pasta. I used daiya cheeze sauce 2 of the 3 packets.
once you combine the burger mixture, macaroni, and cheeze sauce add some spinach and gently fold it into the mixture, let sit for 5 minutes, then mix again, letting it gently cook the spinach with the steam from the food.
Shopping List:
- 1 lb of gluten-free pasta, cooked
- your favorite oil for cooking the pasta
- chili powder
- onion powder
- garlic powder
- smoked paprika
- Cayenne
- Liquid aminos or low sodium soy sauce
- 1lb vegan meat
- Daiya cheeze sauce
- Baby spinach
- Nutritional yeast
